Chocolate Banana Muffins


My intention was to make Oreo Muffins but since Ah Ger was coming to join me, decided to make one more different type. Bb likes banana and chocolates so trying to find recipe that have this combination. Find it from Cuisine Paradise, another nice food blog. I like to see all the lovely pictures that she post.

Ingredients (13 mini cups)
1) 120g plain flour
2) 110g butter, soften
3) 100g castor sugar
4) 10g Hershey cocoa powder
5) 100g mini chocolate chips
6) 1/2 tsp baking powder
7) 1/2 tsp vanilla essence
8) 1/4 tsp banana essence
9) 2 medium eggs
10) 2 medium bananas, mashed with fork

Directions:
1) Stif flour, cocoa powder, baking powder together and set aside
2) Cream butter and sugar with electric beater till light and fluffy (abt 3 - 4 mins on medium speed)
3) Add in eggs slowly and beat till the mixture is well combine without any egg trace
4) Add mashed banana and vanilla essence into butter mixture and give a quick whisk
5) Lower the mixer speed, add flour mixture and blend till smooth
6) Stir in chocolate chips will combined. Scoope the mixture into prepared muffins cups to 3/4 full.
7) Top muffin batter with some extra banana slices and chocolate chips. Bake in pre-heated oven of 180C for about 18 mins. Allow to rest for several mins before serving.
