Banana Walnut Cake

My 1st baking on cake but doesnt turn out to be good. Next time I will remember not to follow the time written on recipe and adjust the timing on my own. Forget everyone's oven is different. The cake turn out to be hard on the outer layer. And as for the taste, I didnt put enough bananas. Never mind, will do better on my next round.

Ingredients
1) 100g butter, soften at room temperature
2) 160g caster sugar
3) 3 eggs, lightly beaten, room temperature
4) 1tsp vanilla extract
5) 2 large ripe bananas, mashed
6) 210g plain flour
7) 1 tsp baking powder
8) 50g walnuts, chopped

Directions:
1) Grease (with butter) and flour the sides of an 8" or 9" rund pan and line the base with parchment paper
2) With an electric mix or a manual whisk, cream butter and sugar till light and fluffy
3) Dibble in the eggs gradually and beat till incorporated in the batter.
4) Add vanilla extract and mashed bananas. Mix till smooth
5) Sieve flour, baking powder and mix till smooth
6) Add chopped walnuts. (reserved some for sprinkling the top if you want)
7) Pour batter into prepared pan and smooth out the top with the spatula. Sprinkle the top with the walnuts.
8) Bake in pre-heat oven at 180 deg C for 60 mins or until a skewer comes out clean when insert into the cake
9) Leave the cake to cool into pan for about 5 - 10 mins, unmold and transfer to wire rack to cool completely.

Chocolate Banana Muffins


My intention was to make Oreo Muffins but since Ah Ger was coming to join me, decided to make one more different type. Bb likes banana and chocolates so trying to find recipe that have this combination. Find it from Cuisine Paradise, another nice food blog. I like to see all the lovely pictures that she post.

Ingredients (13 mini cups)
1) 120g plain flour
2) 110g butter, soften
3) 100g castor sugar
4) 10g Hershey cocoa powder
5) 100g mini chocolate chips
6) 1/2 tsp baking powder
7) 1/2 tsp vanilla essence
8) 1/4 tsp banana essence
9) 2 medium eggs
10) 2 medium bananas, mashed with fork

Directions:
1) Stif flour, cocoa powder, baking powder together and set aside
2) Cream butter and sugar with electric beater till light and fluffy (abt 3 - 4 mins on medium speed)
3) Add in eggs slowly and beat till the mixture is well combine without any egg trace
4) Add mashed banana and vanilla essence into butter mixture and give a quick whisk
5) Lower the mixer speed, add flour mixture and blend till smooth
6) Stir in chocolate chips will combined. Scoope the mixture into prepared muffins cups to 3/4 full.
7) Top muffin batter with some extra banana slices and chocolate chips. Bake in pre-heated oven of 180C for about 18 mins. Allow to rest for several mins before serving.

Tiramisu - 2nd Attempt

My 2nd attempt. This time the taste was ok. Not too strong for the coffee too. But dont understand why it was not hard at the cream layer. Where did I go wrong? Hmm, still trying to figure out. But currently wont be doing. I still own Isaac's order.

Blueberries Muffins

Recently just in hook for baking and cooking. If not for my sickness, I think i will cook and bake more. Need to stop for awhile at this moment before recover. Ok, dont wish to talk much about my sickness. Just make me feel so sian about it.

This time round, I decided to bake muffins. Searching for recipes online and find which one is the best. Still prefer the Noob Cook's method. From here just get to know that Blueberries are in the season now. (May - Sept) so you can easily get from any supermarkets. I got mine at NTUC for $2.65 per box.

Went to Phoon Huat to get the muffins tins too. Sad that the shop at Bedok had closed down and we had to went over to Simei. Luckily is near if not I think I might give up doing it. But love this shop now, it had all the ingredients and stuffs that we can easily get and no need to run over places to search.

Ingredients (13pcs)
1) 190gm plain flour
2) 1 1/2 eggs, beaten
3) 1/2 tbsp baking powder
4) 225gm caster sugar (depends on the sweetness you like, decide to try out 210gm next time)
5) 125gm blueberries
6) 125ml milk
7) 1/2 tbsp vanilla essence
8) 75gm butter, cut to small pcs and soften at room temperature (Noob Cook recipe indicated 65gm but MIL prefer more buttery. Going to try out 70gm next time)

Directions
1) Sift flour, baking powder, and sugar together, mix well.
2) Add in milk, vanilla extract, eggs and butter. Stir until just blended (and lumpy). Be careful not to overmix as it will result in a tough mixture
3) Fold in the blueberries into the mixture. Place baking cases in muffin tins. Spoon the mixture into the cases almost to 80%.
4) Bake for 20 mins in preheated oven of 200C (400F) or until slightly golden brown. Allow to rest for several mins before serving.

First time baking and success. Woot!~ Not bad. But Bb complain too much blueberries inside the muffins which I already put 25gm less. Isaac and Ivan request for chocolate muffins, will try next on this.
